There is NO place like HOME for the holidays, this statement is so true! BUT since I can’t be home in TEXAS for the holidays, I will certainly enjoy the Pacific Northwest with the hubby. It has been a great time thus far and I couldn’t be happier to enjoy the holiday season with my best friend and handsome forever Christmas date! Life is grand no matter where we are! The Addis Adventures are for real y’all!

We kicked off the joyful holiday with the Christmas Tree Lighting event downtown. It was our first one to attend here in Portland, and it did not disappoint! Afterwards we enjoyed an AMAZING dinner at our favorite restaurant, Olympia Provisions. OMG – if you ever visit Portland, you HAVE to check out Olympia! It’s our favorite place to eat eVer! Christmas date nights are the BEST!

 

We also ventured out to Whidbey Island and did an early Christmas with two of our favorite little humans (and two of our big people humans too of course) a couple of weekends ago, and boy did we have a blast! The auntie life is for real one of the greatest roles I have ever been blessed with!

Aren’t they the cutest? Oh, my heart just swells every time I think about them and the joy they bring this family of ours!

Family is literally the most special thing in our lives y’all. Hug your loved ones close and always let them know you care! The holiday season can sometimes feel SO overwhelming and so stressful, but don’t let it be. If you feel the stress outweighing the fun, joy and laughter it’s time to take a deep breath and breathe. Remember who HE is in your life and remember that this time of year isn’t about the hustle and bustle, but it’s about Jesus and holding the ones you love so tight!

Darin and I won’t be doing much Christmas Eve and Christmas Day – we’ll be relaxing with Holly and watching Disney movies ALL DAY! We miss our family back home dearly and we are anticipating a much different Christmas next year! BUT until then, we will joyfully hold one another tight and be thankful for another year of growth and thankful for the love we have found in one another. This year was a major year for us; spiritually, physically and mentally. We experienced miracle after miracle and truly saw God’s thumbprint on so much! Was it easy? No. Was it always rainbows and butterflies? NOT EVEN CLOSE! But……it was GOD! It was all God and all beautiful, even in the mess, it was beautiful. God is good and we have SO much to be thankful for. Most of all, we are thankful for the birth of Christ!

Let me tell you Merry Christmas a few days early my dear friend! If you can’t be home with loved ones, close your eyes and remember the love……home is always in your heart.

Sesame Ginger Chicken with P.F. Changs Sesame Sauce

Appetizer – Edamame and Himalayan Pink Salt sprinkled on top

Ingredients:

Edamame has some awesome health benefits, and that’s why I chose this appetizer for my hubby to eat while he waited on a delicious dinner to be completed!! It has protein, fiber, various amino acids and low levels of healthy fat. It is a great source of various minerals like calcium, iron, magnesium, potassium and zinc!

Main Dish: Sesame Ginger Chicken with P.F. Changs Sesame Sauce

Ingredients:

  • 2 tablespoons avocado oil
  • 1 pound boneless skinless chicken breast, cut into bite-sized pieces
  • 1/4 teaspoon Himalayan Pink Salt
  • 1/8 teaspoon freshly cracked black pepper
  • 2 teaspoons garlic powder
  • 3 teaspoons ginger powder
  • 2 teaspoons soy sauce
  • 2 teaspoons sesame oil
  • 2 teaspoons crushed red pepper
  • 1 teaspoon honey
  • 1/2 teaspoon cinnamon
  • 2  cups of fresh kale
  • 1 cup green beans
  • 1 cup broccoli
  • 1 green pepper
  • 1 red pepper
  • 1 cup mushrooms
  • 1/2 cup onions
  • 3/4 cup P.F. Chang’s® Home Menu Sesame Sauce
  • Almonds

Directions:

Heat 1 tablespoon avocado oil in large skillet over medium-high heat. Season chicken with garlic powder, two teaspoons of ginger powder, Himalayan salt and pepper; add to skillet and cook until no longer pink, approximately 4 minutes. Transfer to a clean bowl.

Stir in kale, green beans, broccoli, green peppers, red peppers, mushrooms and onions to skillet. Cook uncovered and cook over medium heat for approximately four minutes. Add in one teaspoon of ginger powder, crushed red pepper, cinnamon, soy sauce, sesame oil, honey, almonds  and continue to cook uncovered until almonds are toasted, cook and stir approximately five minutes.

Add chicken back to skillet with the remaining teaspoon of Avocado Oil. Add P.F. Chang’s® Home Menu Sesame Sauce and cook until sauce is thickened and bubbling, continue to stir about 1 minute.

Hubby and I really enjoyed this dish! It was delicious and we felt great afterwards. It is important to me that we eat clean and feel great after meals. This meal did not disappoint!
